As the name says is a rich pulao with nine gems. Gems here are of course not the literal gems but the variety of dry fruits and vegetables which are no less than the actual gems 😊. This recipe consists of the richness of desi ghee and the aromatic flavors of the whole spices which give it a royal taste.

Step wise recipe for Navratan Pulao:

1. Wash rice thoroughly with running water and soak for 10-15 minutes.

2. Now, take soaked rice in a pan. Add a black cardamom, a green cardamom, a cinnamon stick, a tablespoon oil. Add 2-3 cups of water and cook for 10 minutes. Stir occasionally and keep a check until rice is cooked. Do not over cook.Strain the excess starch and keep for later use.

3. Now, take 2 tablespoons of desi ghee in a kadhai and add the dry fruits. Stir gently and sauté for a minute. Avoid the dry fruits to get burnt.

4. Take the dryfruits out on a tissue paper once turn crunchy.

5. Now, add paneer cubes to the desi ghee and fry until golden brown. Keep flipping the paneer cubes to avoid burning.

  6. Further, take another kadhai and add 2 tablespoons of desi ghee. Add 1 tablespoon cumin seeds, cinnamon sticks, 2 cloves, 1 black cardamom. Allow them to crackle and turn aromatic.

7. Add chopped onions, garlic and 2 slit green chillies and sauté for a minute until onions turn golden brown.

8. Add chopped capsicums & carrots & mix well.

9. Now add boiled green peas & sweet corn kernels, salt, garam masala & red chilli powder. Mix well and cook until all the veggies are well  coated with spices.

10. Now, add cooked rice to the veggies and mix. Then add 2 spoons of saffron milk and mix again well. (to make saffron milk take lukewarm milk in a bowl and add 5-6 strands of saffron. Keep for 5 minutes and then add it to the cooked rice).

11. Now, add fried dry fruits & cottage cheese cubes to the rice and mix gently to avoid paneer cubes to break.

12. Our rich, royal, flavorful Navratan pulao is ready. Garnish with fresh coriander leaves & pumpkin seeds and serve hot. Enjoy with curd or raita or any gravy of your choice.
