Tomato Soup is one of the most popular and loved soups in winters as we get a lot of fresh and juicy tomatoes during this season. I personally love tomato soup a lot since my childhood hence I love to make it myself too.

Soup made with seasonal and fresh tomatoes does not only taste good but it is super healthy and organic too without any additional preservatives.

I always try to keep it natural and healthy and I have mad this recipe without any butter, cream, sugar or corn flour to keep it Vegan, diabetes friendly and good for heart.

I have also made the bread croutons to be enjoyed with this soup. As it is quite cold in Delhi, I often make this soup at home as an evening snack and my family loves it a lot as it gives quite a comfort and warmth during cold chilling evenings.

There are different ways to make this soup:

  • Pressure cooking the tomatoes
  • Roasting the tomatoes
  • blanching the tomatoes
  • sautéing the tomatoes and making puree

In this post I have used the 4th method i.e . by sautéing the tomatoes and making puree.

Notes/Tips to follow

  1. You can use fresh cream. butter to make it more richer and creamier. But I did not use any of these in this recipe because I have made a Vegan version of it.
  2. I also wanted to make it good for heart and diabetes friendly.
  3. You can use 2 tablespoons of corn flour slurry to make it thicker.
  4. I have strained the puree to make it smooth but this step can be skipped to keep it more fibrous.
  5. We can also add boiled carrots to it to make it a healthy tomato carrot soup.

Ingredients

  • 3-4 medium sized tomatoes
  • 2-3 ginger cubes
  • 3-4 garlic cloves
  • 2-4 black pepper corns
  • 2-4 cloves
  • salt to taste
  • 1 tablespoon olive oil
  • 1.5 glasses water
  • 1 tablespoon oregano seasoning
  • 1/2 tablespoon garlic powder
  • 1/2 tablespoon black pepper powder

Healthy Tomato Soup Recipe

  1. Heat oil in pan.

2. Add cloves, pepper corns, ginger, garlic and green chilies and cook for a minute until the raw smell goes away.

3. Add tomato cubes. Sauté and cook until turn soft and mushy

4. Now, add salt to taste and 1/2 tablespoon black pepper powder.

5. Let it cool down and transfer the tomato mixture in a blender jar.

6. Blend to make a smooth paste.

7. Strain the paste using a strainer.

8. Add the filtered puree in kadhai.

8. Add 1.5 glasses of water.

9. Now add 1/2 tablespoon of black pepper powder.

10. Add 1/2 tablespoon garlic powder and mix well.

11. Further add 1 tablespoons of mixed herbs/oregano seasonings.

12. Bring it to boil at a low flame to get the desired consistency.

13. Serve hot and enjoy during the cold winters 🙂
