Ingredients:

To make the dough & donuts:

  • 2 Cups flour (maida)
  • a pinch of salt
  • 1 tablespoon sugar
  • 1.5 tablespoons  Aactive dry yeast
  • 1/4 cup lukewarm water/milk
  • 2 tablespoons butter
  • Warm milk to knead the dough
  • Oil for frying

To make the chocolate glaze:

  • 1 small packet of dark chocolate or any milk chocolate
  • 1 packet of white chocolate

Note:

  • To make the dough fluffy, soft and rise well use a good quality yeast.
  • Always mix the yeast with lukewarm milk or water otherwise it will not rise well.
  • Keep the dough at a warm place to rise well for 1-2 hours and knead it  really well to make it as smooth as possible, it will make the donuts soft.
  • Donuts have to fried on a low/medium flame. If you see they are turning golden very quickly, you need to decrease the heat. Otherwise, they will remain raw from inside.
  • We need to make sure that the donuts should not be overcookd or turn crispy.

4. Now, take 2 cups of flour in a mixing bowl. Add a pinch of salt & 2 tablespoons of melted butter in it. Add the yeast & sugar mixutre and mix well. Now, slowly add warm milk and start kneading the dough. Do not worry if the dough turns sticky. It should come together and become smooth as we continue kneading. Let the dough rest for around 1-2 hours.

5. After 2 hours, the dough should rise to double its original size. If this doesn’t happen, check the expiry date & quality of the yeast as mentioned in the notes section above.

To make the dough:

1. Stretch the dough with your palms for around 5 mintues to make it smooth. Now,  take a big portion of the dough. Dust it with the flour and flatten it using palm & fingers. Keep it a little thick. Use of rolling pin is not really required as the dough is already stretchy.

2. Now, cut the flattened base using a dounut cutter or by using 2 different sized lids. I used a bowl to cut the big round shape and a small bottle lid to cut the smaller round shape at the centre. Keep these at a butter paper to rest for 15 more minutes by applying some butter.
