Rakshabandhan, Eid, Janmashtami & Independence day all these festivals are round the corner and this year the festive season will not be the same as always but that should not and will not stop us from enjoying the festivals and having our traditional delicacies. We are experiencing social distancing and not meeting our loved ones, also we are a bit reluctant to order and buy the sweets from our regular sweet shops and vendors. Hence, I thought to bring up the festive special recipes which are super easy and quick to make at home during this social distancing era.Here, is the first recipe in the Festive series- Easy milkpower Gulab Jamun – Instant Gulab Jamun- Gulab Jamun with Milk Powder.” This can be considered as a bachelor’s recipe that means a bachelor can also make this as a festve delight if away from home.

Ingredients

To make the gulab jamun balls:

  • 2 cups milk powder
  • 1/2 cup maida
  • 2 tablespoon desi ghee
  • a pinch of baking soda
  • Milk to make a dough (at room temperature)
  • Desi ghee or oil for frying

To make the sugar syrup:

  • 2 cups water
  • 1 cup sugar
  • 2-3 green cardamoms
  • saffron strand (optional)
  • 1/2 tablespoon lemon juicer

Note/ Tips to follow:

  • Gulab Jamuns are usually made by mawa/khoya but as these are instant or bachelor gulab jamuns, I have used milk powder. They are equally soft & juicy and taste equally good like mawa ones.
  • While making the dough, do not knead it like a usual dough otherwise it will harden the gulab jamun balls because of the formation of gluten.
  • Let the jamuns soak in the sugar syrup completely for atleast 1-2 hours so that they absorb the syrup.
  • Keep the size of the jamuns small because they expand while frying and while being soaked in the  sugar syrup.
  • Add lemon juice to the sugar syrup which avoids it to crystalize.
  • To check if the sugar syrup is ready, take a drop on your inde finger. Touch it with your thumb and take both apart. It should make a string like formation which shows  that the sugar syrup is ready.*

Step wise recipe for Easy milkpowder Gulab Jamun

For making the sugar syrup:


1. Heat 2 cups of water in a pan and add 1 cup of sugar. Let it boil on a low flame until the sugar dissolves. Keep stirring occasionally. 

2. Add 2 cardamoms and stirr. Let it cook for 4-5 minutes at a low flame.

3. Now, add 1/4 tablespoon of lemon juice and boil until the syrup condenses and thickens. It should make a syrup of 1 string. Refer the notes.

*Turn off the heat and keep it aside.

For making the gulab jamun balls:


1. Take 2 cups of milk powder. Add 1/4 cup maida, 2 tablespoons ghee and a pinch of baking soda. Mix well.

2. Gradually add milk and start mixing to form a soft dough. Do not knead like a usual dough, Just mix gently.

3. Now, apply some oil or ghee on your palms, take a small portion and make balls gently to avoid cracks.

4. Now, heat ghee or oil in a deep kadhai. slowly drop the balls into it. Fry on a low-medium flame and keep flipping.

  5. Once, the jamuns change the color and turn golden brown, take out on a paper towel to drain out excess oil.

 6. Now, immediately drop the jamuns in the warm sugar syrup. Soak them for around 1-2 hours to absorb the syrup. 

7. Serve warm. Combine with Vanilla ice cream or have just like that. Enjoy!!
