Bhapa Doi | Steamed Yogurt – Bengali dessert (Without condensed milk) (Bhapa means Steamed Doi means Yogurt) is a traditional bengali dessert made by mixing milk and yogurt and steaming them together. It is one of the popularly served desserts in the Bengali  festivals and wedding events. It can be added with the flavors of cardamom and saffron and can be topped with different fresh fruits and nuts. Here I am sharing the detailed recipe to make this yummy flavorful Bengali dessert at home in a pan using the gas stove:

Ingredients for Bhapa Doi:

  • 2 cups milk
  • 1 cup yogurt
  • Sugar to taste
  • 1/2 tablespoon cardamom powder
  • 2 cups water (for steam)
  • Fresh fruits to garnish

Note:

  • We can add saffron milk to add more flavor to it. Additionally, we can add mango pulp or any other fruits to make fruit flavored bhapa doi.
  • We can also add chopped dry fruits & nuts to garnish.
  • Apart from steaming, this can also be steamed in the oven at 180 C or 380 F.
  • While steaming, cover the ramekin  bowls with a foil tightly & cover the lid. It will be cooked in approximatel 20-30 minutes.
  • *In case you are not covering the ramekin bowls then do not put on the lid of the pan. In this case, bhapa doi will take 20 more minutes to be ready. Hence, it will take approximately 40 minutes to cook completely.
  • To check if the bhapa doi is cooked well, insert a toothpick into it. It should come out clean. If it comes out moist, cook for 5 minutes more and it will be set well with it’s internal heat.

Recipe:

1. Take 2 cups milk in a pan start heating it on the gas stove at a low flame. 

2. Turn on the heat and add sugar to it and start strirring.

3. Keep stirring using the spatula on a low flame.

 4. Add 1/2 cardamom powder and mix. Cook until the milk reduces to half.

5. Turn off the heat and let the milk cool to become lukewarm.

6. Now, take yogurt in a separate bowl and whisk it well to make it smooth and creamy.

7. Now, start adding the lukewarm milk to yogurt.

8. Keep whisking the milk and yogurt mixture to make it creamy and lump free.

9. Transfer the mixture in ramekin bowls. You can get these ramekin bowls on any of the online shopping portals.

10. Take water in a pan or kadhai. Cover it with a lid to make steam. Put the ramekin bowls in the kadhai and steam it for 40 minutes to set well. Keep checking in  between. In case the water quantity reduces, add 1 cup water again.

11. After 40 mintues, turn off the heat and let it cool completely. To check if it is cooked well, insert a tooth pick into the yogurt. It should come out clean. Garnish with fruits like chopped mangoes, strawberries, grapes or any fruit of your choice. Refrigerate for 30-40 minutes. Serve cold & enjoy!
